Ingredients
- 2 Garlic Cloves (minced)
- 53g Brown Sugar
- 170g Tomato Paste
- 30g Dark Chocolate Fudge Sauce
- 82g Soy Sauce
- 1 tbsp Olive Oil
- 2 tsp Smoked Paprika
- 2 tsp Worcestershire Sauce
- Rack of Pork Ribs
Method
- Warm olive oil in a saucepan
- Add the garlic and sauté for about 30 seconds
- Add the remaining ingredients and simmer until thickened, 15-20 minutes
- Chill for at least 3 hours or overnight
- Smother a rack of pork ribs
- Cover and refrigerate overnight
- Bake in pre-heated oven at Gas Mark 6/400 °F / 200 °C
- Remove foil and cook for another 25-30 minutes
- Check food is piping hot throughout, serve
