Peanut Brittle Cookies


  • 230g Butter 100g Granulated Sugar 200g Light Brown Sugar 3 tsp Vanilla Extract 2 Eggs 1stp Cornflour 1/2 tsp Salt 1 tsp bicarbonate of Soda 312g Plain Flour 125g Peanut Brittle, crushed


  1. In a mixing bow, beat the butter until smooth and creamy
  2. Add the sugar and beat until fluffy and light in colour
  3. Add the vanilla extract and eggs and beat until combined
  4. Add in the cornflour, salt and bicarbonate of soda, flour and mix thoroughly
  5. Fold in the peanut brittle
  6. Chill the mixture in a refrigerator for at 3 hours or overnight
  7. Sit the cookie dough at room temperature for 20 minutes
  8. Scoop the dough and roll into 1 tbsp balls and place on a lined baking tray, leaving a good distance between each piece to spread
  9. Bake in a pre-heated oven for 10 minutes at Gas mark 4 / 350°F / 177°C
  10. Transfer to a baking rack to cool completely
  11. Serve
